Why Ethiopia Kept the Book
The complete text survives because one church never stopped copying it.
The short answer
1 Enoch survives complete only in Geʽez, preserved by the Ethiopian Orthodox Tewahedo Church, which recognises it within its broader canon. Everywhere else it faded from use, leaving Greek excerpts and Aramaic fragments. The book was not removed from a finished Bible; different communities settled different collections.

Correcting the 'banned book' framing
There was no single moment at which an authority struck Enoch from a completed canon. Jewish, Catholic, Orthodox and Protestant collections took shape over long periods and mostly never included it. The Ethiopian tradition did, and still does.
That is a less dramatic story than suppression, and it is the one the manuscript evidence supports.
